Six Weeks Until Purim

Many of you don’t even have Purim on your radar yet, but here at PurimLand.com we start early to be able to bring you our great line up of arrangements and Shalach Manos so that you can send delicious Purim Baskets to family and friends in Israel. Although it is too early to get baking, we are planning out our 2018 selection of sweets and treats.  This year, we thought we’d share some recipes of our past hits so that you can recreate them yourselves.  From our kitchen to yours with love!

Our Cookie dough brownie deluxe was a real hit this past Purim.  We sold out early and had some great feedback after Purim from happy customers and recipients.   Share in the chocolatey goodness by making some yourselves.

 

Start with your favorite brownie recipe and then using a 2.5 inch circle cookie cutter, cut out discs of brownie.  Top with a disc of our yummy chocolate chip cookie dough (recipe follows below) and then spoon some chocolate genache over the top, being careful to drip a bit down the sides.  Roast some marshmallows in a single layer in your oven and top each portion with a roasted marshmallow.

Chocolate chip cookie dough 

(That’s right- it’s raw chocolate chip cookie dough! But this recipe is egg free so no need to worry about eating raw dough)

½ cup (1 stick) marg

1/3 cup sugar

2/3 cup brown sugar

1 tsp vanilla extract

3 tbsp soy milk

1 ¼ cups flour

½ tsp salt

 A pinch of baking soda

1/3 cup chocolate chips

Cream marg with sugars until light and fluffy.  Add milk and vanilla, mix.  Beat in flour, salt and baking soda.  Fold in chips by hand.  Chill to make easier to work with.  Shape into discs by rolling out dough about 3/4 of an inch thick and cutting with your round cookie cutter.

Next, prepare a chocolate genache by finely chopping a 3.5 ounce  bar of chocolate.  Heat 4 ounces parve whip topping or dairy cream over medium heat just until boiling.  Remove from heat and add chocolate.  Allow to sit for 5 minutes and then whisk until smooth.
