Cinnamon crumb cake

I’ve tried many new recipes over the years, many were unremarkable and just not impressive, but every once in a while I hit gold.  This is recipe is one of those that you are going to make time and again.  It’s a real hit with my family and guests and a great option for gifting as well.   This recipe makes enough batter for a 9×13 inch pan, but you can also make it in loaf pans or even as cupcakes.
Tip: if you bake this in loaf pans, grease pans and then line with baking paper that extends over the sides so that you use it to lift the cake clean out of the pan.

Cinnamon Crumb Cake

1 cup oil
2 cups sugar
4 eggs
3 cups flour
3 tsp baking powder
1 cup orange juice
1 tsp vanilla sugar
cinnamon mixture:
1 3/4 tsp cinnamon
1 1/4 tsp cocoa
1/2 cup brown sugar
crumbs:
1/2 cup flour
1/4 cup sugar
1/2 stick margarine
Combine batter ingredients and mix well.  Combine cinnamon mixture in a small bowl; set aside.  Combine crumb mixture in another bowl; set aside.

Grease 9×13 inch pan.  Pour one-third of batter into prepared pan.  Sprinkle half of the cinnamon mixture over batter.  Pour another one-third of batter on top of cinnamon mixture.  Sprinkle rest of cinnamon mixture on top of batter and pour remaining one-third of batter on top of cinnamon mixture.  Top with crumb mixture.  Bake at 350 degrees (F) for 1 1/2 hours.
